Latin name: Brosme

 

Tusk is a fish from the cod family. It is easily recognized by the presence of one elongated dorsal fin and elongated or rounded fins on belly and tail.  

 

The structure of the fish meat is slightly stronger than the traditional cod. Tusk is therefore an excellent alternative or variation for recipes with cod. Just like cod, tusk has a fairly neutral and delicious taste.
