Saithe is a ray-finned saltwater fish that belongs to the cod family, it has a dark green to black back - also called "black coalfish".

Saithe has a full flavor and is relatively inexpensive compared to cod. Compared to cod, coalfish has a somewhat grayer, less white color that varies depending on the region where it was caught.
