The Latin name: Solea Senegalensis
The farmed sole comes from Iceland
Sole is easy to recognize: elongated oval in shape with a round head. His skin is light to dark brown with dots. The bottom is white.
Sole is a true delicacy, the fish meat is firm, and at the same time soft and juicy.
